Prickly Pear
The locals in Morocco call cactus KARMOUSS. Pear or fig-like cactus fruits are also called cactus figs, Indian figs, barbarian figs, or tuna, which are the fruit of the cactus – the species Opuntia (lat. Opuntia Ficus Indica), and can grow up to 8 meters in height. The prickly pear shell is covered with tiny and very sharp spines. The fruit is usually 7 centimeters long, the skin can be yellow, purple, or greenish. The flesh is orange-pink in color and its texture is similar to melon. The fruit tastes very sweet and aromatic, so it has always been an important part of the human diet. In the past, they were widely used for culinary and medicinal purposes, as well as livestock feed.
The cactus and its uses in culinary and folk medicine
The Aztecs used it to treat burns, the Chinese to treat puss-filled wounds, and the Native Americans have eaten them and made syrup to treat coughs and asthma. In traditional Mexican medicine they have been used to treat diabetes and high cholesterol. Edible and useful, however, are not only the fruits of the cactus, but also its leaves. The plant is known for its flattened stems or leaves called ‘shovels’ or barbed pads which are 4 to 16 centimeters long. Fresh cactus leaves, which have their spines removed beforehand, are a good culinary specialty, and dried and crushed into powder that is used for medicinal purposes.
